Fabada – Vegan Style

Cheap and easy vegan family meals to share

Ingredients

1 box of Linda McCartney Sausages £2

1 onion chopped

1 pepper chopped

1 stick celery chopped

2 veggie oxo cubes

1 tin of value chopped tomatoes

Squeeze tomato purée

1 Clove of garlic

1 heaped tsp smoked paprika

Pinch of dried parsley

Salt and pepper

Tablespoon of red wine vinegar

Teaspoon of maple syrup

1 can cannellini Beans

1 can butter beans

Instructions

Cook sausages as Pack instructed

Sauté veg until soft then add all other ingredients and simmer on a low heat for at least 30 mins

Add some water to thin to required consistency
